"Cheater" Guac Recipe, Comin' In HOTT!

Cooking is neither my favorite activity nor one that I'm particularly skilled at, so when I finally do find a recipe that I can add to my minimal repertoire... I tend to use it rather often. Luckily, this new guacamole recipe is super easy! So easy, you can make it on vacation, with very dull knives.

  • First I chop the onion. Yes, the WHOLE onion. Around here we like our guac chunky, not like the pre-made stuff at the store 💁
  • Then I juice 2 limes over the onion
  • Then slice and dice 3 avocados 
  • Then I add the secret "cheater" ingredient 🤐
  • Then I dice up 1-2 jalapenos (depends on the crowd you're working with)
  • Then add Kosher Salt
  • Lastly... Stir it up, baby!

It's Rotel! With Lime & Cilantro! I'm a cheater! I normally try to use fresh ingredients, but this was perfect for 2 reasons. 

  1. If you think chopping an onion was tough with a dull knife, can you imagine the squishy red mess that would have been a result of dicing tomatoes?!?
  2. We're on vacation, so we aren't cooking a lot. It seems like a waste to buy the whole bushel of cilantro only to use a few springs and toss the rest. And everyone knows, without cilantro, there is no guacamole, just diced avocados and veggies.

I will tell you, that Rotel tends to be a little spicy, so be aware of that if you have a sensitive palette among the group. And also, that you will want to be sure to drain it very very well. Nobody likes soggy guacamole!

And that's it! Now you eat! So delicious, even the picky ones dive in! And what do you wear while you eat your guacamole?!? A #stackthatgives back, of course! ...And, everyone's favorite Juicy Couture dress from 2004... don't worry, I left the Ugg boots at home 😜 But seriously, am I the only person who still wears these dresses to the pool?!? So handy! Cover-up and towel all in one; Jessica Simpson knew more than she let on.

So there you have it, my No-Fail "Cheater" Guacamole recipe! And of course, don't for get to buy extra limes for the tequila!!!

Hot Sauce in My Bag

There's a little something you should know about me... I was carrying hot sauce in my bag before it was cool. I am a Hot Sauce ADDICT!! I love a good Disney trip, for the obvious reasons, but also... you can find Texas Pete and Sriracha packets on the grounds. Panera Bread and Lion Country Safari are a good spot for Tabasco and my favorite doughnut store keeps me in Crystal packets. I may not be an old lady yet, but I can give your grandma and her Sweet 'N' Low packets a run for their money! 

So when trying to name this HOT new summer stack with a fitting cocktail name, I was at a bit of a loss. I wanted something Summery and also colorful.. but I was coming up with a bunch of dead ends. Until, my lovely Cocktail Connoisseur of a brother-in-law paid me a visit last weekend and introduced me to, the cocktail OF.MY.DREAMS. 

Cajun Lemonade may not be full of color, but it's full of flavor and the Cajun culture brings all the color to the table! To make your own Cajun Lemonade, you'll need:

  • 12 ounces white rum or vodka (Belvedere Vodka is my personal choice)
  • 4 ounces Pimm's No. 1
  • 8 ounces fresh lemon juice
  • 4 ounces Simple Syrup
  • 1/2 tablespoon Tabasco
  • Ice
  • 8 ounces chilled 7-Up
  • Thin lemon wheels

In a large resealable container, combine all of the ingredients except ice, the 7-Up and the lemon wheels. Refrigerate until chilled, at least 1 hour. Cover tightly and shake, then pour into an ice-filled pitcher. Strain into ice-filled rocks glasses, stir in the 7-Up and garnish with lemon wheels. Recipe as per Food & Wine

For those of you that are doubting me right now... don't knock it til you try it! It's incredibly refreshing and you can add as much or as little hot sauce as you like... It kind of reminds me of that diet cleanse with the cayenne pepper; I just imagine myself losing pounds while sipping 💁 We also added a little fresh mint for garnish,  just because we had some around. 

Enough about the name already, let's get to the goods! Honestly, this has been my Go-To stack for accessorizing recently! White cotton shirt, white linen pants, Cajun Lemonade stack! Black silk top, black shorts, Cajun Lemonade stack! Not only has it been my accessorie du jour... I'll admit, it's driving my apparel choices! Who needs anything other than a blank canvas when you're rocking this arm par-tay!?!

I am loving wearing them all together, like Pixie, but there are definitely some mini stacks in here for those of you that are less bold (aka obnoxious 😂)
